Whiskey’s Chemistry Brings All The Boys To The Still
Posted: Published on April 1st, 2015
All you ever wanted to know about the chemistry of whiskey. Reuters Whether it's Scotch, rye or bourbon, whiskey is having quite the moment. Many people enjoy whiskey for its complexity, and that variety is due to its chemistry. Compound Interesthas released an infographic detailing the rich chemistry behind your favorite spirit, breaking down how phenolic compounds, whiskey lactones, esters and aldehydes combine to create the perfect whiskey. As Compound Interest explains, making whiskey is easy. Barley is soaked in water, and the drying process -- such as using peat fires for Scotch -- lends the first layer of flavor to the soon-to-be whiskey. Mashing -- milled barley and water -- breaks down the starch in barley to sugar. From there, it's a matter of fermentation, distillation and aging. These steps all play an important role in developing the final flavor and chemistry of whiskey. Phenolic compounds are responsible for the smoky and bitter flavors of whiskey. These compounds come from, not surprisingly, the fire used in the drying process. The smoke from the peat fire or the char from oak barrels are soaked up by the barley.Guaiacol is responsible for the smoky flavor in whiskey while eugenol is responsible … Continue reading

Student helps to discover new pain relief delivery method
Posted: Published on April 1st, 2015
A Chemistry undergraduate at the University of York has helped to develop a new drug release gel, which may help avoid some of the side effects of painkillers such as ibuprofen and naproxen. In a final year project, MChem undergraduate student Edward Howe, working in Professor David Smith's research team in the Department of Chemistry at York looked for a way of eliminating the adverse side-effects associated pain-killing drugs, particularly in the stomach, and the problems, such as ulceration, this could cause patients. Supervised by PhD student Babatunde Okesola, whose research is supported by The Wild Chemistry Scholars Fund, Edward hoped to create gels which could interact with drugs such as Naproxen, and release them at the slightly alkaline pH values found in the intestine rather than the acidic conditions in the stomach. His aim was to both protect the pain-killing drugs and help limit some of the side effects they can cause. The researchers created a new gel, based on small molecules which self-assemble into nanofibers which could interact with a variety of anti-inflammatory, painkiller drugs, including iburofen and naproxen. The research is published in Chemical Communications. Specific interactions between the gel nanofibres and the drugs meant that high … Continue reading
